Easy Meatloaf Muffin Recipe For Meal Prep

This easy meatloaf muffin recipe is going to be your new favorite lunch or dinner idea! It is super quick to make and can be meal prepped for the whole week.

One of the hardest things about cooking in college or as a young adult is finding recipes that aren’t for a whole family. Sometimes, all you want is a recipe that is pre-portioned and easy to make for one or two meals.

I am always on the hunt for ways to turn regular dinner recipes into easy, meal-preppable (not sure if that’s a word but I guess it is now!) recipes that only serve one or two. So, that’s exactly what I did, and I got an easy meatloaf muffin recipe that I know you are going to love!

Originally, this recipe was like any other meatloaf recipe out there: just one big loaf that served about six people.

After adapting the recipe a little and changing a few things, it’s now pre-portioned and can be made and meal prepped for only one person!

One of the best parts, it’s a one bowl recipe… and who doesn’t love not having any dishes to do after dinner!

This post is all about an easy meatloaf muffin recipe!

Step 1: get your ingredients and mix them up

This recipe literally only uses 6 ingredients, plus some salt and pepper. All you are going to need is your ground beef, ketchup, vegetarian vegetable soup, breadcrumbs, an egg, and minced garlic. That’s it! Once you got all these ingredients, just throw ’em all in a bowl and mix everything together.

Step 2: put the mixture in the pan and cook

For this step, you have a few options. If you want to make a traditional meatloaf, just put all of the meat mixture into a loaf pan . But, if you want to use the easy meatloaf muffin recipe, you are going to do things a little differently here.

Instead of using a loaf pan, we are going to use a cupcake pan to cook the meatloaf. Lightly grease your cupcake pan. Then, use a cupcake scooper or large spoon to scoop equally sized balls of the meatloaf mixture into the pan.

You want to fill the cupcake pan completely and even have some overflowing over the top. The meatloaf obviously doesn’t rise in the oven, it actually gets a little bit smaller.

So, make sure to overfill your cupcake pan so you have good sized meatloaf muffins.

Once you scooped all of your meatloaf mixture (it should fill about a dozen regularly sized cupcake inserts), you’re all done! Just put the pan in the oven and cook them for about 30-40 minutes. You can also use a meat thermometer to make sure that they are done cooking.

Step 3: eat or save

Once your meatloaf muffins are all done in the oven, serve immediately if you are planning on eating them that day for lunch or dinner. About 2-3 meatloaf muffins is the equivalent of a regularly sized slice of meatloaf.

Depending on how many people are eating the meatloaf muffins, you will most likely end up with some leftover. Just put them in a container in the fridge if you are planning on having them for lunch or dinner in the next few days. They will last about 3-4 days this way.

If you want them to last even longer, use a plastic bag to freeze them. I would suggest freezing the exact amount you are expecting yourself or someone else to eat in each bag. That way, when it comes time to eat them again, you already have a pre-portioned bag all ready to go.

You can also make the whole recipe for meal prep too! After you make them, decide how many you will be eating this week and put those in the fridge. Then just put the rest in the freezer and have a super easy meal for next time.

To heat them up from the fridge or the freezer, you can either use the oven or the microwave. If you are short on time, heat them in the microwave in 30 second increments. If you want them to get crispier, put them in the oven for a few minutes.

Easy Meatloaf Muffin Recipe For One

This is the perfect recipe to make for an easy dinner and meal prep meal! With only six main ingredients and barely any dishes, this recipe can't get any easier!

Ingredients
  

  • 1 pound ground beef
  • 1/4 cup ketchup
  • 1/2 cup breadcrumbs
  • 3 cloves garlic
  • 1 can vegetarian vegetable soup
  • 1 egg
  • salt and pepper to taste

Instructions
 

  • Add all ingredients into a large bowl and mix together until just combined. Avoid over-mixing.
  • To make a regular meatloaf, scoop all of the mixture into a loaf pan. Cook at 400 degrees for 40-50 minutes.
  • To make meatloaf muffins, grease a cupcake pan. Spoon overflowing scoops of the meat mixture into the cupcake pan. Cook at 400 degrees for 30-40 minutes.
  • Serve immediately. To save, store in a container in the fridge for 3-4 days or a freezer bag in the freezer for 2-3 months. To reheat, heat in microwave in 30 second increments or in oven until hot.
